Bliss Balls Recipe

Makes: approx 26 (if 4cm diameter bliss balls)

Ingredients:

24 fresh chopped dates

1/2 orange rind thinly grated

1 tsp vanilla bean paste

1 cup water

1 cup chopped macadamias (make sure the macadamias are in small pieces; can use a rolling pin to break them into pieces in a plastic bag)

1/2 cup pepitas

7 heaped desert spoons almond meal

2 heaped desert spoons organic cacao

Desiccated or fine coconut

Method:

In a small/ medium saucepan, combine dates, vanilla bean paste and orange rind. Place on medium heat and gradually add the water, stirring through. As the dates break down and the water gets soaked up, a thick paste is formed. After you have added the full cup of water, check to see if you need to add a touch more. Otherwise take off the heat, place in a mixing bowl and allow to cool completely, roughly 30-40 minutes.

Once mixture is cooled, add the chopped macadamias, pepitas, almond meal and cacao. Stir through so mixture is combined very well and evenly.

Form a smooth ball of approx 4cm in diameter.

In a separate bowl, add desiccated coconut. Roll the ball in the desiccated coconut and place in your container on baking paper. Repeat until mixture is used.

Place in the freezer for 15-20mins so it sets, then store in the fridge.

Note:

– The mixture should last a good few weeks if not more in the fridge

– These are fantastic for energy rather than resorting to a coffee

– Gluten free and vegan
